10c Air popped Popcorn
1c Roasted Pumpkin Seeds
2/3c Coconut Nectar or Sorghum
1/4tsp coarse sea salt
3/4c Nut Butter of Choice
- Place Popcorn and Pumpkin Seeds in a large bowl.
- In a small saucepan, combine coconut nectar, vanilla, sea salt, and nut butter. Heat over medium until mixture starts bubbling. Pour over popcorn mixture and stir with a spatula to thoroughly coat. (This may take several minutes of stirring.)
- Prepare a bowl with ice water and lay out a sheet of wax paper (or parchment paper) on the counter. Dip your hands in ice water before rolling popcorn into balls. Place popcorn balls on wax paper to cool and harden. (You may need to dip your hands in the water every or every other popcorn ball.)
