Summer is here and for most, it is time to lighten up and enjoy fresh foods and feeling light in the heat. Make sure you have balance with all meals and snacks by getting protein and fiber in while getting creative and playing with your food to keep things light and interesting! These tuna and cucumber boats with help you hit the mark and keep things not only healthy, but fun and delicious at the same time!


2-3 Long Cucumbers

1 Can Albacore Tuna

1/c Fresh Dill

5 Stalks of Celery

1/2 An Onion

1/4c Walnut Pieces

1 Lemon

1-2Tbl Walnut Oil

Scoop all the seeds out from the inside of the cucumbers and discard

Rinse tuna

Chop Dill

Zest and Juice Lemon

Slice Onion into rings then dice

Slice Celery once lengthwise then dice

Add all of the ingredients except for the cucumber to a large bowl, stir until well combined and stuff and fill the inside of the cucumbers with the mixture

Chill and serve
